Vanilla extract
6 g (1 tsp)
Cream of tartar
3 g (1 tsp)
Sugar
400 g (2 cup)

Preheat your oven to 220 degrees Fahrenheit.

Mix the egg whites, cream of tartar, salt, and vanilla extract in a stand mixer or a large bowl using an electric whisk on low speed. The mixture should become light and foamy in a couple of minutes.

Switch to high speed and gradually add sugar to the mixture. Add some food coloring if you want to. Wait till the sugar is completely dissolved and the mixture is airy.

Using a spoon, put the mixture into a pastry bag with a star tip. Line a baking tray with parchment paper. Pipe the cookies onto it. You can leave little space between them as the cookies won't deform while baking.

Bake for one hour and leave in a closed oven for 30 minutes more. Sprinkle them with some cinnamon or cocoa powder and wait till the cookies cool completely.
